Hearty Quesadillas

Have you made quesadillas at home and found them to be dry or lacking flavor. Mine were the same way for a while, and I found that the secret is in the sauce. Below is my recipe for quesadillas and the sauce to go with. 


Ingredients:

  • 4 Large flour tortillas
  • 2-3 Chicken Breasts
  • Butter
  • 1/4 Cup Mayonnaise
  • 1 tsp of sugar
  • 1/2 tsp of paprika
  • 3/4 tsp of cumin
  • 1/8 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • 4 cups of Mexican Variety cheese(Monterey Jack, Mild Cheddar, Queso Quesadilla and Asadero)

Directions:

  1. Cut the chicken Breasts into strips and cook in vegetable oil, or cook the chicken in the oven till done and pull into strips. 
  2. Combine the spices, sugar, and Mayo in a bowl. 
  3. Place down a tortilla.
  4. Add a 1/2 cup layer of cheese to 1/2 of the tortilla.
  5. Add some chicken, then another 1/2 cup of cheese. 
  6. On the other side of the tortilla spread a spoon full of the sauce and fold the tortilla in half.
  7. In a skillet that has been heated to slightly above medium, spread a small amount of butter around the skillet.
  8. Cook both sides of the quesadilla till they start to turn crispy and the cheese inside melts.
  9. Enjoy with salsa, sour cream or queso from your local Moe's
Variations:
  • Sometimes I will make twice as much sauce and mix the sauce and chicken together before putting in the quesadilla.
  • Adding beans, olives, lettuce, jalapenos, tomatoes, to your liking.

Spicy Sweet Rub

Welcome to my Om nom noms blog. I created this blog to showcase dishes and recipies that I make. Since I am on break from college I am not doing much cooking, I want to start by showcasing a BBQ rub that I use.

This dry rub is one of my favorite. It is great on chicken and pork, i've even used it on venison. It has a sweet smokey flavor with a kick.

  • 4 parts Paprika
  • 1 part Chili Powder
  • 1 part Cheyenne
  • 2 parts Sugar
  • 2 parts Brown Sugar
  • 2 parts Ground Cumin
  • 2 parts Salt
  • 1 Part Black Pepper
  • 1 Part Onion Powder
